- Take a frying pan for cooking bacon and preheat it over medium heat.

- Take a medium sized pot, fill it 3/4 of water and then salt the water. Heat this over medium heat (should be very slightly bubbling, but not boiling)

Crack and drop your egg (I do 2, but start with one until you're comfortable), into the center of that whirlpool and let it cook for about 1 minute and 20 seconds. You may need to adjust the time to ensure your yolk doesn't overcook adm your whites cook all the way through.


- Next, assemble your Benedict. Place the Spinach onto an English muffin half. Next split a bacon strip in half and set it on top.

- Using your slotted spoon, move the egg to the top and dab the water off with a papertowel.


- Using a spoon, poor 1-2 spoonfuls of Hollandaise on top and Sprinkle a bit of dired Basil and pepper.

- Finish by topping it with chopped green onion and serve immediately.
