- 2 Tomatoes
- 2 Eggs
- 2 Scallions
- 1 minced Ginger, fresh
- 1 tsp Salt
- 1 tsp Bonito Soup Stock, Hondashi
- 1 tsp Ketchup
- 2 tbsp Water
- 2 tsp Olive oil
Steps to make Stir-Fried Tomato Egg
- Chop scallions in 1 inch and separate into green and white. Get about 3 inches scallion green and finely chop.
Cut tomatoes in halves.
- Crack eggs in a bowl, beat eggs and add 1/2 tsp Salt.

- Heat up a wok with olive oil, scallion white, and minced ginger until fragrant. Add tomatoes and water, stir for 2 minutes.
- Add Hondashi, 1/2 tsp salt, ketchup and 1-inch scallion green and mix well.
Move everything to the edge, in the middle add beaten eggs liquid. When eggs slightly firm, continue stirring gently.
- Sprinkle finely chopped scallion green on top. Serve immediately.
